It is important to keep thawed or fresh prawns cold at all times. When shopping for prawns it is advisable to use a chiller bag or esky to keep the product cold.

If purchasing frozen prawns it is important to retain their frozen state. Do not refreeze prawns that have been thawed.

Instead of purchasing fresh prawns and freezing at home, purchase frozen prawns that have been commercially snap frozen in ultra low temperature freezers. Commercially frozen prawns insure the product has a longer shelf life and quick freezing locks in the quality and the flavour of the product. Frozen prawns are not subject to seasonal variations and the product is of a consistent high standard.

Frozen prawns should be kept in the freezer, wrapped in plastic to prevent freezer burn.

To retain texture, flavour and nutrients, controlled thawing in a refrigerator is best. To thaw seafood quickly, run cold water over it.
